Roasted Red Pepper Pesto Toasts Recipe

Ingredients
  • 16 fresh flat-leaf parsley leaves
  • 1 (7-oz) bottle roasted red bell peppers, drained
  • 3 tbsps jarred pesto
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 16 (1/4-inch-thick) slices baguette

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Place first 4 ingredients (pesto through black pepper) in a food processor/blender; process until smooth.
  • Step #3 Spread 2 tsps of pesto mixture evenly over each bread slice.
  • Step #4 Bake on an ungreased baking sheet for 10 mins.
  • Step #5 Garnish each slice with 1 parsley leaf.
