Three-onion Pizza Recipe

Ingredients
  • 1/2 c thinly sliced leek
  • 1 c very warm water (120° to 130°)
  • 2 tbsps olive oil, divided
  • 1/2 c (2 oz) crumbled feta cheese
  • 1 tbsp cornmeal
  • 2 tbsps (1/2 oz) grated fresh Parmesan cheese
  • 1 package quick-rise yeast
  • 3/4 tsp salt, divided
  • 1 tbsp sliced fresh or 1 tsp dried oregano
  • 1 c thinly sliced sweet onion
  • 1/2 c thinly sliced green onions
  • 2 1/4 c bread flour

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Place flour, 1/2 tsp salt, & yeast in a food processor/blender; pulse 2 times or until mixed.
  • Step #4 With processor on, slowly add water & 1 tbsp oil through food chute; process until dough forms a ball.
  • Step #5 Process an extra 45 seconds.
  • Step #6 Turn dough out onto a lightly floured surface; knead lightly 4 to 5 times.
  • Step #7 Cover up & let rest 30 mins.
  • Step #8 Roll dough into a 14-inch circle on a lightly floured surface.
  • Step #9 Place dough on a baking sheet sprinkled with cornmeal.
  • Step #10 Crimp edges of dough with fingers to form a rim.
  • Step #11 Sprinkle top feta cheese evenly over dough.
  • Step #12 Combine onions, leek, oregano, 1 tbsp oil, & 1/4 tsp salt; spread onion mixture evenly over pizza crust.
  • Step #13 Sprinkle top with Parmesan cheese; bake this at 425° for 25 mins or until crust is lightly browned.
