Crostini Empoli Recipe

Ingredients
  • 1 tsp sliced fresh tarragon
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1 garlic clove, halved
  • 1/8 tsp pepper
  • 1 tbsp capers
  • 2 c sliced seeded tomato
  • 1 tbsp olive oil
  • 16 (1/2-inch-thick) slices diagonally cut French bread baguette (about 8 oz), toasted
  • 1/2 tsp sliced fresh mint
  • 1 hard-cooked egg, sliced
  • 1 tbsp sliced fresh parsley

Directions
  • Step #1 Combine sliced tomato, salt, & pepper in a bowl; stir well.
  • Step #2 Cover up & chill 1 hr.
  • Step #3 Combine parsley & next 5 ingredients (parsley through egg) in a another bowl; stir well.
  • Step #4 Cover up & chill 1 hr.
  • Step #5 Rub cut sides of garlic over 1 side of each toasted bread slice.
  • Step #6 Combine tomato mixture & parsley mixture; stir well.
  • Step #7 Spoon 2 tbsps tomato-parsley mixture onto each bread slice.
  • Step #8 Drizzle 1 tbsp oil over crostini.
  • Step #9 Serve as soon as possible.
