Ingredients
  • 2 large egg whites
  •  Sauce:
  •  Dash of ground red pepper
  • 1 tsp vegetable oil
  • 1/3 c minced green onions
  • 1 tsp Cajun seasoning
  •  Dash of garlic powder
  • 2 tbsps minced green onions
  • 1/3 c plain fat-free yogurt
  • 1 tbsp Creole mustard
  • 1 tbsp Worcestershire sauce
  •  Cakes:
  •  Cooking spray
  • 1 tbsp sweet pickle relish
  • 2 tbsps light mayonnaise
  • 1/4 c light mayonnaise
  • 3 c sliced cooked turkey breast
  • 2 (1-oz) slices white bread

Directions
  • Step #1 To prepare the sauce, mix first 7 ingredients in a small bowl.
  • Step #2 Chill.
  • Step #3 To prepare the cakes, place bread in a food processor/blender, & pulse 10 times or until coarse crumbs form to measure 1 1/4 c.
  • Step #4 Set aside.
  • Step #5 Combine the turkey & next 5 ingredients (turkey through egg whites).
  • Step #6 Stir in the breadcrumbs.
  • Step #7 Divide turkey mixture into 8 equal portions, shaping each into a 1/2-inch-thick patty.
  • Step #8 Heat oil In a large-ish nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #9 Add patties; cook 5 mins.
  • Step #10 Turn patties over; cook 5 mins or until golden brown.
  • Step #11 Serve with sauce.
