Make-ahead Pork Dumplings Recipe

Ingredients
  • 2 (16-oz) packages wonton skins
  •  Ginger Dipping Sauce (optional)
  •  Thai chili sauce (optional)
  • 1 1/2 lbs lean boneless pork loin chops, cut into chunks
  • 1 (12-oz) package 50%-less-fat ground pork sausage
  • 1 1/2 tsps salt
  • 1 to 2 tbsps minced fresh ginger
  • 1/4 c sliced fresh parsley
  • 4 tbsps sugar
  • 2 tsps lite soy sauce
  • 15 water chestnuts, finely sliced
  • 1/2 c cornstarch
  • 1 tsp sesame oil
  • 4 green onions, sliced
  •  Oyster sauce (optional)
  • 1/2 c fat-free reduced-sodium chicken broth
  • 1 tsp teriyaki sauce

Directions
  • Step #1 Process pork loin in a food processor/blender until finely sliced.
  • Step #2 Combine pork loin, pork sausage, & next 11 ingredients.
  • Step #3 Cut corners from wonton skins to form circles.
  • Step #4 Drop 1 tsp mixture onto middle of each skin.
  • Step #5 Gather up skin sides, letting dough pleat naturally.
  • Step #6 Lightly squeeze the middle while tapping the bottom on a flat surface so it will stand upright.
  • Step #7 Arrange dumplings in a bamboo steam basket over boiling water.
  • Step #8 Cover up & steam 20 to 25 mins.
  • Step #9 Serve with sauces, if desired.
  • Step #10 Note: To freeze, arrange dumplings on a baking sheet; freeze for 2 hrs.
  • Step #11 Place in zip-top freezer bags; label & freeze for up to 3 mounths.
  • Step #12 To cook dumplings from frozen state, steam for 22 to 25 mins.
