Lemon-macerated Okra And Olives Recipe

Ingredients
  • 1/2 tsp crushed red pepper
  • 1/2 tsp kosher salt
  • 1/4 c fresh lemon juice
  • 2 tbsps extra-virgin olive oil
  • 1 tbsp lemon rind
  • 3 c small okra pods
  • 2 thyme sprigs
  • 2 garlic cloves, thinly sliced
  • 1/2 c kalamata olives
  • 2 bay leaves

Directions
  • Step #1 Combine all ingredients In a large-ish zip-top plastic bag, & seal.
  • Step #2 Marinate in refrigerator 48 to 72 hrs, turning bag every once in awhile.
  • Step #3 Strain the okra mixture through a sieve over a bowl, discarding marinade.
