Baked Spinach-and-artichoke Dip Recipe

Ingredients
  • 2 (6-oz.) packages fresh baby spinach
  • 1 tbsp butter
  • 1 (14-oz.) can artichoke hearts, drained & sliced
  • 1 (8-oz.) package 1/3-less-fat cream cheese
  • 1/2 c shredded part-skim mozzarella cheese, divided
  • 1 garlic clove, sliced
  •  Fresh pita wedges or baked pita chips
  • 1/2 c light sour cream

Directions
  • Step #1 Microwave spinach In a large-ish, microwave-safe bowl at HIGH 3 mins or until wilted.
  • Step #2 Drain spinach well, pressing between paper towels.
  • Step #3 Chop spinach.
  • Step #4 Melt butter in a nonstick skillet over medium-high heat.
  • Step #5 Add cream cheese & garlic; cook 3 to 4 mins, stirring constantly, until cream cheese melts.
  • Step #6 Fold in spinach, artichokes, sour cream, & 1/4 c mozzarella cheese; stir until cheese melts.
  • Step #7 Transfer mixture to a 1-qt.
  • Step #8 shallow baking dish.
  • Step #9 Sprinkle top with remaining 1/4 c mozzarella cheese.
  • Step #10 Bake at 350° for 15 mins or until hot & bubbly.
  • Step #11 Serve as soon as possible with fresh pita wedges or baked pita chips.
  • Step #12 Note: Thoroughly wash bagged spinach before using.
