Fresh Herbed Heirloom Tomatoes And Goat Cheese Crostini Recipe

Ingredients
  • 2 tbsps fresh lemon juice
  • 2 tbsps water
  • 1/4 c sliced fresh basil
  • 1/2 tsp freshly ground black pepper, divided
  • 1/2 tsp kosher salt, divided
  • 8 (1/4-inch-thick) slices diagonally cut French bread baguette
  • 20 (1/4-inch-thick) slices tomato
  • 1 tsp extra-virgin olive oil
  • 4 tsps goat cheese, divided
  • 1/4 c sliced fresh parsley

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Place the first 5 ingredients in a mixer; process until smooth.
  • Step #3 Place baguette slices in a single layer on a baking sheet.
  • Step #4 Bake at 350° for 7 mins or until crisp.
  • Step #5 Spread 1/2 tsp cheese over each slice.
  • Step #6 Divide tomatoes evenly among 4 salad plates.
  • Step #7 Drizzle each serving with 1 tbsp herbed oil.
  • Step #8 Sprinkle top each with 1/8 tsp salt & 1/8 tsp pepper.
  • Step #9 Garnish each with 2 crostini.
