Shrimp Pâté On Crostini Recipe

Ingredients
  • 4 garlic cloves, pressed
  • 1/4 c sliced fresh parsley
  • 2 lbs unpeeled, medium-size fresh shrimp
  • 2 tsps fines herbes
  • 6 c water
  • 1/4 c sliced fresh basil
  • 3 small cucumbers, sliced
  • 1/4 tsp salt
  • 3 tbsps lemon juice
  • 1/2 c butter or margarine, softened
  • 1 (3-oz) package cream cheese, softened
  • 1 baguette
  • 1/2 c mayonnaise
  • 1/2 tsp ground red pepper

Directions
  • Step #1 Bring 6 c water to a boil in a Dutch oven; add shrimp, & cook 3 to 5 mins or just until shrimp turn pink.
  • Step #2 Drain; rinse with cold water.
  • Step #3 Peel shrimp; devein, if desired.
  • Step #4 Coarsely chop shrimp.
  • Step #5 Toss with lemon juice.
  • Step #6 Combine butter & cream cheese.
  • Step #7 Add mayonnaise & next 6 ingredients; fold in shrimp mixture.
  • Step #8 Spoon into a lightly greased 4-c mold or an 8- x 4-inch loafpan; cover & chill 8 to 10 hrs.
  • Step #9 Cut baguette into 1/4-inch-thick slices, & place on a baking sheet.
  • Step #10 Bake at 350° for 3 to 4 mins on each side.
  • Step #11 Cool on wire racks.
  • Step #12 Unmold pâté, & spread on baguette slices; top this with cucumber.
