Low-fat Jalapeño Poppers Recipe

Ingredients
  • 1/2 c (4 oz.) fat-free cream cheese or neufchatel (light) cream cheese
  • 1 tbsp lime juice
  • 2 large egg whites
  • 3 tbsps shredded cheddar cheese
  • 1 c cornflake crumbs
  • 2 tsps minced garlic
  • 1/3 c minced green onions
  •  About 3/4 lb fresh jalapeño chilies (14 or 15, equal-size), rinsed

Directions
  • Step #1 In a bowl, use a fork to mix cream cheese, garlic, onions, cheddar cheese, & lime juice.
  • Step #2 Wearing rubber gloves, cut chilies in half lengthwise.
  • Step #3 With a knife, cut seed lump from beneath the stem inside each chili, leaving stem end in place (to form a c).
  • Step #4 Pull out & discard veins.
  • Step #5 Fill chili halves equally with cheese mixture, spreading surface smooth.
  • Step #6 In a small bowl, whisk egg whites until slightly frothy.
  • Step #7 Put cornflake crumbs in another small bowl.
  • Step #8 Dip filled chili halves, in egg whites, 1 at a time, then roll in crumbs.
  • Step #9 Set chilies slightly apart on a 12- by 15-inch baking sheet, filling the sheet.
  • Step #10 Bake in a 350° oven until crumbs are slightly darker brown & crisp, about 20 mins.
  • Step #11 Serve hot or warm.
