Cumin-spiced Mahi Mahi Tacos With Nectarine-avocado Salsa Recipe

Ingredients
  • 1 tsp ground cumin
  • 1/8 tsp cayenne pepper
  •  Cooking spray
  • 1/4 tsp dried oregano
  •  Nectarine-Avocado Salsa
  • 1/8 tsp garlic powder
  • 1/8 tsp freshly ground black pepper
  • 4 (4-oz) mahi mahi fillets
  • 12 corn tortillas
  •  Zesty Sour Cream
  • 1 1/2 tsps kosher salt

Directions
  • Step #1 Combine first 6 ingredients, & sprinkle it over all surfaces of the fish.
  • Step #2 Grill fish, skin side up, on lightly oiled grates over medium-high heat (350° to 400°) for 4 mins.
  • Step #3 Turn fish over, & grill 4 mins or until fish becomes opaque & begins to flake.
  • Step #4 Remove skin, & break fish into chunks.
  • Step #5 Lightly coat tortillas with cooking spray, & grill 1 to 2 mins each side.
  • Step #6 Fill each tortilla with fish & top this with Nectarine-Avocado Salsa & Zesty Sour Cream.
  • Step #7 Serve as soon as possible.
