Meatball Quesadillas Recipe

Ingredients
  • 12 (8-inch) flour tortillas
  • 1 small green bell pepper, sliced
  •  Toppings: sour cream, salsa
  • 1 1/2 c (6 oz) shredded Monterey Jack cheese with peppers
  • 1/2 (16-oz) jar spicy black bean dip
  • 30 to 32 frozen cooked meatballs, thawed & crumbled

Directions
  • Step #1 Spread bean dip over 6 tortillas.
  • Step #2 Layer crumbled meatballs, cheese, & bell pepper evenly over bean dip.
  • Step #3 Top with remaining tortillas.
  • Step #4 Cook quesadillas in a nonstick skillet or griddle over med-heat/flame 2 mins on each side or until golden & cheese is melted.
  • Step #5 Cut into 4 triangles, & serve this with desired toppings.
  • Step #6 Note: For testing purposes only, we used Guiltless Gourmet Spicy Black Bean Dip.
