Crab-and-scallop Cakes Recipe

Ingredients
  • 1/4 tsp pepper
  •  Garnishes: parsley sprigs, lemon wedges
  • 1 tsp Old Bay seasoning
  • 3 medium tomatoes, peeled, seeded, & sliced
  •  Yellow Pepper Sauce
  •  Red Pepper Sauce
  • 2 tbsps butter or margarine
  • 1 lb bay scallops, drained
  • 1/3 c whipping cream
  • 1 large egg
  • 6 green onions, thinly sliced
  • 2 lbs fresh lump crabmeat, drained
  • 1/2 tsp salt

Directions
  • Step #1 Process scallops in a food processor/blender until sliced.
  • Step #2 Add cream & next 4 ingredients; process until mixd, stopping to scrape down sides.
  • Step #3 Combine scallop mixture, onions, & tomato; carefully fold in crabmeat.
  • Step #4 Cover up & chill at least 2 hrs.
  • Step #5 Shape mixture into 8 patties (about 1/3 c each).
  • Step #6 Melt butter In a large-ish skillet over medium-high heat; add cakes, in batches, & cook, 3 to 4 mins on each side or until golden.
  • Step #7 Serve with Red Pepper Sauce & Yellow Pepper Sauce; garnish, if desired.
