Edamame-garlic Puree Recipe

Ingredients
  • 1 1/2 tsps lemon juice
  • 3/4 tsp salt
  • 10 garlic cloves, peeled
  • 1/8 tsp black pepper
  • 4 c frozen blanched shelled edamame (green soybeans)
  • 1/4 c soft silken tofu

Directions
  • Step #1 Bring 2 quarts water to a boil in a medium saucepan over medium-high heat; add edamame & garlic.
  • Step #2 Cook for 5 mins.
  • Step #3 Drain in a colander over a bowl, reserving 1/2 c liquid.
  • Step #4 Combine edamame, & tofu in a food processor/blender, garlic, 1/2 c cooking liquid, & process until smooth (about 3 mins).
  • Step #5 Add lemon juice, & pepper, salt, & pulse to mix.
