Tomato-ginger Jam Recipe

Ingredients
  • 5 lbs tomatoes, peeled, seeded, & sliced
  • 1/3 c sliced garlic
  • 3/4 c fresh lime juice
  • 3/4 c fresh lemon juice
  • 1 1/2 c sugar
  • 1 tsp salt
  • 1 (6-inch) lemon verbena sprig
  • 1/3 c sliced ginger

Directions
  • Step #1 Bring all ingredients to a boil in a Dutch oven over medium-high heat.
  • Step #2 Reduce heat to medium-low & let simmer 5 mins.
  • Step #3 Remove lemon verbena sprig, & discard.
  • Step #4 Simmer, stirring every once in awhile, 1 1/2 to 2 hrs or until mixture is thick; cool completely.
  • Step #5 Cover up & chill 8 hrs.
