Crostini With Gorgonzola, Caramelized Onions, And Fig Jam Recipe

Ingredients
  • 2 tbsps maple syrup
  • 2 c water
  •  Remaining ingredients:
  • 1 tsp fresh thyme leaves
  • 1/2 tsp sliced fresh thyme
  •  Dash of salt
  •  Cooking spray
  • 1 c dried Black Mission figs (about 6 oz)
  • 2 c vertically sliced yellow onion
  • 24 (1-inch-thick) slices diagonally cut French bread baguette, toasted (about 12 oz)
  • 1 tsp balsamic vinegar
  • 1/2 c water (optional)
  • 1/2 c (4 oz) Gorgonzola cheese, softened
  • 1 tsp lemon juice
  • 1/4 tsp salt
  •  Onions:
  •  Jam:

Directions
  • Step #1 To prepare jam, remove stems from figs.
  • Step #2 Place figs & juice in a food processor/blender; process until figs are coarsely sliced.
  • Step #3 Place fig mixture, 2 c water, syrup, & dash of salt in a medium saucepan; bring to a boil.
  • Step #4 Reduce heat, & let simmer 25 mins or until thick.
  • Step #5 Cool completely.
  • Step #6 To prepare onions, heat a large nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #7 Add onion, 1/2 tsp thyme, vinegar, & 1/4 tsp salt; cover & cook 5 mins.
  • Step #8 Uncover & cook 20 mins or until onion is deep golden brown, stirring every once in awhile.
  • Step #9 While onion cooks, 1/4 c at a time, add 1/2 c water, to keep onion from sticking to pan.
  • Step #10 Spread 1 tsp cheese over each baguette slice.
  • Step #11 Top each slice with about 1 tsp onion mixture & 1 tsp jam.
  • Step #12 Sprinkle top evenly with thyme leaves.
