Chicken-artichoke-cheese Spread Gift Box Recipe

Ingredients
  • 4 green onions, minced
  • 1/2 tsp salt
  • 3 c sliced cooked chicken
  • 1 (14-oz) can artichoke hearts, drained & sliced
  • 1 tbsp lemon juice
  • 1 c finely sliced pecans, toasted
  • 2 c shredded Parmesan cheese
  •  Garnishes: 7 to 8 green onion stems & 1 red chile pepper, halved
  • 1 tsp seasoned pepper
  • 2 (8-oz) packages cream cheese, softened

Directions
  • Step #1 Stir together first 9 ingredients In a large-ish bowl until mixed; spoon into a straight-sided 9- x 5-inch loafpan lined with plastic wrap.
  • Step #2 Cover up & chill 8 hrs, or freeze up to 1 month; thaw in the refrigerator 8 hrs.
  • Step #3 Invert chilled mixture onto a serving plate; remove plastic wrap.
  • Step #4 Cut loaf in half crosswise; place 1 cut half directly on top of remaining cut half, & smooth sides.
  • Step #5 Serve with crackers or toasted French baguette slices.
  • Step #6 Garnish, if desired, by plunging green onion stems in boiling water; plunge stems into ice water to stop the cooking process.
  • Step #7 Immediately transfer to paper towels; drain stems, & press between paper towels to dry.
  • Step #8 Press stems into sides of cheese square, beginning with the end of one stem on each side.
  • Step #9 Bring stems up & over to center of top; form loops with remaining stems, & secure with wooden picks.
  • Step #10 Arrange chile pepper halves on top.
  • Step #11 Note: To make 2 small boxes, cut in half, & garnish each half, if desired.
