Spicy Monterey Jack Cheese Logs Recipe

Ingredients
  • 1/4 tsp ground red pepper
  • 1 tsp Worcestershire sauce
  • 1/2 c sliced fresh parsley
  • 1 (8-oz) package cream cheese, softened
  • 1 (8-oz) block Monterey Jack cheese with peppers, shredded
  • 1 (10-oz) block extra-sharp Cheddar cheese, shredded
  • 1 c sliced walnuts or pecans, toasted

Directions
  • Step #1 Stir together first 5 ingredients In a large-ish bowl until mixed.
  • Step #2 Divide cheese mixture into 2 equal portions; shape each portion into an 8-inch log.
  • Step #3 Combine walnuts & parsley.
  • Step #4 Roll cheese logs evenly in walnut mixture; cover & chill 8 hrs.
  • Step #5 NOTE: For testing purposes only, we used Cracker Barrel Extra-Sharp Cheddar.
  • Step #6 To make ahead, wrap each log in heavy-duty plastic wrap, & freeze.
  • Step #7 Thaw in refrigerator overnight.
  • Step #8 Port Wine Cheese Logs: Substitute 1 (8-oz) wedge or block Cheddar cheese with port wine for Monterey Jack cheese with peppers.
  • Step #9 Proceed with recipe as directed.
  • Step #10 Port wine Cheddar cheese can be found in the deli section of your grocery store.
