Gravlax With Norwegian Caviar Sauce Recipe

Ingredients
  • 1/4 c whipping cream
  • 1 jar (2 oz.) red lumpfish roe (Norwegian caviar)
  •  Fresh dill sprigs, rinsed
  • 1 jar (2 oz.) black lumpfish roe (optional)
  • 1/2 tsp grated lemon peel
  • 3/4 c sour cream
  • 1 lb thinly sliced gravlax (see notes)
  • 1/4 tsp fresh-ground pepper

Directions
  • Step #1 In a bowl, lemon peel, whipping cream, stir this together sour cream, & pepper.
  • Step #2 Pour red lumpfish roe into a fine wire strainer & rinse under cold running water.
  • Step #3 Drain well & stir in theto sour cream mixture.
  • Step #4 Arrange gravlax on a platter or plates.
  • Step #5 Garnish with dill sprigs.
  • Step #6 Rinse black lumpfish roe in a fine wire strainer, drain, & put in a small bowl.
  • Step #7 Serve red caviar sauce & black caviar with gravlax to add to taste.
