Step #1 In a bowl, lemon peel, whipping cream, stir this together sour cream, & pepper.
Step #2 Pour red lumpfish roe into a fine wire strainer & rinse under cold running water.
Step #3 Drain well & stir in theto sour cream mixture.
Step #4 Arrange gravlax on a platter or plates.
Step #5 Garnish with dill sprigs.
Step #6 Rinse black lumpfish roe in a fine wire strainer, drain, & put in a small bowl.
Step #7 Serve red caviar sauce & black caviar with gravlax to add to taste.
