Crab Cakes Recipe

Ingredients
  • 1/4 c finely sliced green onions
  • 2 large egg whites
  •  Cooking spray
  • 1/4 tsp black pepper
  • 1 tbsp canola oil, divided
  • 3 (1-oz) slices white bread
  • 1 lb lump crabmeat, shell pieces removed
  • 2 tbsps sliced fresh dill
  • 2 tbsps reduced-fat mayonnaise

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Place bread in food processor/blender; process until coarse crumbs measure 1 1/2 c.
  • Step #3 Combine breadcrumbs & next 6 ingredients (through crabmeat).
  • Step #4 Divide crab mixture into 6 equal portions, shaping each into a 1-inch-thick patty.
  • Step #5 Heat 1 1/2 tsps oil In a large-ish nonstick skillet over medium-high heat.
  • Step #6 Add 3 patties; cook 1 min on each side.
  • Step #7 Remove from pan; place on a jelly-roll pan coated with cooking spray.
  • Step #8 Repeat procedure with the remaining 1 1/2 tsps oil & remaining 3 patties.
  • Step #9 Bake at 400° for 20 mins or until thoroughly heated & golden.
