Tofu-pine Nut Lettuce Wraps Recipe

Ingredients
  • 16 to 20 iceberg or butter lettuce leaves, rinsed & crisped
  •  Salt
  • 2 c coarsely sliced Italian parsley
  • 12 oz extra-firm tofu (also called nigari tofu)
  • 1/2 c pine nuts
  • 2 tbsps soy sauce
  •  About 3/4 c hoisin sauce
  • 3 tbsps rice vinegar
  • 1 tbsp vegetable oil
  • 1 tbsp sugar

Directions
  • Step #1 Rinse tofu & pat dry.
  • Step #2 Cut into about 1/4-inch cubes.
  • Step #3 In a 10- to 12-inch frying pan over med-heat/flame, stir pine nuts until golden, about 4 mins; pour from pan.
  • Step #4 Add tofu, soy sauce, & sugar to pan; stir over medium-high heat until tofu is hot & liquid is absorbed, vinegar, 2 to 3 mins.
  • Step #5 Add parsley & oil; stir just until parsley begins to wilt, about 30 seconds.
  • Step #6 Add salt to taste.
  • Step #7 Just before serving (warm or cool), stir in the pine nuts & transfer to a bowl.
  • Step #8 Pile lettuce into a basket & spoon hoisin sauce into a small bowl.
  • Step #9 Spoon tofu mixture into lettuce leaves, add a little hoisin sauce, & wrap up to eat.
