Seared Shrimp Cocktail With Tropical Chipotle-avocado Salsa Recipe

Ingredients
  • 30 large unpeeled shrimp (about 1 1/2 lbs)
  • 2 tsps olive oil
  • 1 tsp minced chipotle chile, canned in adobo sauce
  • 1/3 c sliced green onions
  • 1 tbsp low-sodium soy sauce
  • 1/2 tsp ground cumin
  • 2 tsps fresh lemon juice
  • 9 tbsps sliced peeled ripe avocado
  • 1/2 tsp sugar
  • 6 lime wedges (optional)
  • 2 tbsps sliced fresh basil
  • 3 garlic cloves, minced
  • 1 tbsp dry sherry
  • 1 1/2 c finely sliced fresh pineapple
  • 1/2 tsp salt, divided
  • 1/2 c finely sliced tomato

Directions
  • Step #1 Combine first 8 ingredients (through sugar) in a medium bowl; stir in the 1/4 tsp salt.
  • Step #2 Cover up & chill in the fridge.
  • Step #3 Peel & devein shrimp, leaving tails intact.
  • Step #4 Combine shrimp, sherry, & next 3 ingredients (through garlic) In a large-ish zip-top plastic bag; seal & shake to coat shrimp.
  • Step #5 Marinate in refrigerator 30 mins.
  • Step #6 Heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #7 Remove shrimp from bag; discard marinade.
  • Step #8 Add shrimp to pan; sprinkle with remaining 1/4 tsp salt.
  • Step #9 Cook 2 mins on each side or until shrimp are done.
  • Step #10 Spoon 1/3 c salsa into each of 6 martini glasses; place 5 shrimp on rim of each glass.
  • Step #11 Garnish each glass with a lime wedge, if desired.
