Ingredients
3 tbsps sugar
2 1/2 c white vinegar
1 tsp cumin seeds
1 tsp fennel seeds
2 green or red jalapeño peppers, halved lengthwise
1 1/2 lbs small okra pods
4 fresh dill sprigs
2 c water
2 tbsps kosher salt
1 tsp coriander seeds
1 tsp white peppercorns
Directions
Step #1 Combine vinegar & the next 7 ingredients (through cumin seeds) In a large-ish saucepan; bring to a boil.
Step #2 Cook 1 min or until sugar & salt dissolve, stirring frequently.
Step #3 Remove from heat; stir in the fresh dill sprigs, jalapeños, & okra pods.
Step #4 Cool completely; pour mixture into an airtight container.
Step #5 Cover up & chill in the fridge.
Step #6 Note: Refrigerate okra in an airtight container for up to two weeks.
