Spicy Pickled Okra Recipe

Ingredients
  • 3 tbsps sugar
  • 2 1/2 c white vinegar
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 2 green or red jalapeño peppers, halved lengthwise
  • 1 1/2 lbs small okra pods
  • 4 fresh dill sprigs
  • 2 c water
  • 2 tbsps kosher salt
  • 1 tsp coriander seeds
  • 1 tsp white peppercorns

Directions
  • Step #1 Combine vinegar & the next 7 ingredients (through cumin seeds) In a large-ish saucepan; bring to a boil.
  • Step #2 Cook 1 min or until sugar & salt dissolve, stirring frequently.
  • Step #3 Remove from heat; stir in the fresh dill sprigs, jalapeños, & okra pods.
  • Step #4 Cool completely; pour mixture into an airtight container.
  • Step #5 Cover up & chill in the fridge.
  • Step #6 Note: Refrigerate okra in an airtight container for up to two weeks.
