Pork Tenderloin Sandwiches With Cranberry-coriander Conserve Recipe

Ingredients
  •  Melted butter
  • 1 tsp freshly ground black pepper
  • 1 tsp ground cumin
  • 8 tsps coriander seeds, divided*
  • 4 lbs small boneless pork tenderloins
  •  Cranberry-Coriander Conserve
  •  Poppy or sesame seeds (optional)
  • 2 tbsps kosher salt
  • 1/4 c olive oil
  • 2 tsps dried crushed red pepper
  • 3 (11-oz) packages frozen dinner rolls

Directions
  • Step #1 Thaw dinner rolls according to package directions.
  • Step #2 Preheat oven to 375°.
  • Step #3 Cook coriander seeds in a hot skillet over medium-high heat, stirring constantly, 2 to 3 mins or until seeds are toasted & fragrant.
  • Step #4 Pulse coriander seeds in an electric spice or coffee grinder until crushed.
  • Step #5 (If you don't have a grinder, or place coriander seeds in a zip-top plastic bag, seal, use a mortar & pestle, & lb seeds with a meat mallet or rolling pin until crushed.
  • Step #6 ) Reserve 2 tsps crushed coriander for Cranberry-Coriander Conserve.
  • Step #7 Stir together remaining crushed coriander, olive oil, & next 4 ingredients.
  • Step #8 Place pork on a lightly greased rack in a broiling pan.
  • Step #9 Rub all sides of pork with spice mixture.
  • Step #10 Place pork in preheated oven.
  • Step #11 Increase heat to 450°, & bake 25 mins or until a meat thermometer registers 150°.
  • Step #12 Remove pork from oven, & reduce heat to 350°.
  • Step #13 Cover up pork loosely with aluminum foil wrap, & let this stand 15 mins or until thermometer registers 160°.
  • Step #14 Brush thawed dinner rolls with melted butter; sprinkle evenly with poppy or sesame seeds, if desired.
  • Step #15 Bake rolls at 350° for 15 to 20 mins or until golden.
  • Step #16 Cut pork into 1/4-inch slices, & serve this with Cranberry-Coriander Conserve & dinner rolls.
  • Step #17 *3 tsps store-bought ground coriander may be substituted.
  • Step #18 Omit toasting & crushing steps.
  • Step #19 Reserve 3/4 tsp for Cranberry-Coriander Conserve; use remaining as directed.
  • Step #20 Note: For testing purposes only, we used Sister Schubert's Parker House Style frozen yeast rolls.
