Tempura Dill Pickles Recipe

Ingredients
  • 1 c all-purpose flour
  •  Vegetable oil
  • 1 (24-oz) jar sliced kosher dill pickles
  • 1 tsp ground red pepper
  • 1/4 tsp salt
  • 1 c club soda, chilled
  • 1 tsp garlic powder

Directions
  • Step #1 Drain pickles, reserving 2 tbsps pickle juice.
  • Step #2 Press pickles between layers of paper towels.
  • Step #3 Set aside.
  • Step #4 Pour oil to a depth of 3 inches into a Dutch oven; heat to 370°.
  • Step #5 Combine flour & next 3 ingredients in a medium bowl.
  • Step #6 Stir in club soda & reserved 2 tbsps pickle juice, stirring just until mixd.
  • Step #7 (Batter will be lumpy.
  • Step #8 )Dip pickles into batter, letting excess drip off.
  • Step #9 Fry pickles, in batches, 2 1/2 mins or until golden brown.
  • Step #10 Drain on wire racks over paper towels, & serve as soon as possible.
