Mushroom Bocadillos Recipe

Ingredients
  • 1/4 tsp ground nutmeg
  • 1/4 c fine dried bread crumbs
  • 4 large eggs
  • 1 lb sliced mushrooms
  • 1/4 c finely sliced onion
  • 1/2 lb asadero or jack cheese, shredded
  •  Salt & pepper
  •  About 2 tbsps butter or margarine
  • 1/2 c minced fresh cilantro

Directions
  • Step #1 In a 10- to 12-inch frying pan over high heat, melt 2 tbsps butter.
  • Step #2 Add mushrooms, onion, & nutmeg.
  • Step #3 Stir often until mushrooms are lightly browned, about 10 mins.
  • Step #4 Spice up to taste with salt & pepper.
  • Step #5 Let cool.
  • Step #6 Meanwhile, cilantro, in a bowl, beat eggs to mix with crumbs, & all but 1/2 c of the cheese.
  • Step #7 Coarsely chop the mushroom mixture & stir in theto the egg mixture.
  • Step #8 Pour into a buttered 8-inch square pan.
  • Step #9 Bake in a 325° oven until center feels firm when lightly pressed, about 30 mins (about 20 mins in a convection oven).
  • Step #10 Sprinkle top evenly with remaining cheese & bake just until it begins to melt, 3 to 4 mins more (1 to 2 mins in a convection oven).
  • Step #11 Remove from oven & let this stand in pan until warm, at least 15 mins, or until cool.
  • Step #12 Cut into 1-inch pieces & arrange on a platter.
