Smoky Shrimp And Avocado Seviche Recipe

Ingredients
  • 1/3 c finely sliced red bell pepper
  • 1 tbsp finely sliced canned chipotle chile in adobo sauce
  • 1/4 c fresh orange juice
  • 3 tbsps sliced fresh cilantro
  • 1/3 c finely sliced peeled jicama
  • 1/4 c finely sliced onion
  • 1/2 tsp sugar
  • 1 c sliced peeled avocado
  • 1 1/2 lbs medium shrimp, peeled & deveined
  • 4 oz baked tortilla chips
  • 1/2 tsp salt
  • 1/3 c fresh lime juice

Directions
  • Step #1 Cook shrimp in boiling water 2 mins.
  • Step #2 Drain & plunge shrimp in ice water.
  • Step #3 Let stand 3 mins; drain.
  • Step #4 Combine shrimp & remaining ingredients except chips In a large-ish bowl, stirring well.
  • Step #5 Cover up & chill up to 4 hrs.
  • Step #6 Serve with chips.
