8 (1/2-inch) pieces crystallized ginger or 1/2 tsp ground ginger
1 tbsp low-sodium soy sauce
3/4 tsp Cajun seasoning
1/4 to 1/2 tsp crushed red pepper
1/2 c coarsely sliced water chestnuts
2 tbsps white wine vinegar
2/3 c coarsely sliced green onions
2 tbsps light mayonnaise
32 (1/4-inch-thick) slices French bread baguette (about 1 loaf)
Directions
Step #1 Heat oil In a large-ish nonstick skillet over medium-high heat.
Step #2 Add onions, garlic, & pepper; sauté 1 min.
Step #3 Place onion mixture, & next 6 ingredients (turkey through soy sauce) in a food processor/blender; process until well-mixed, turkey, scraping sides of processor bowl every once in awhile.
Step #4 Spoon pâté into a bowl; cover & chill at least 8 hrs.
Step #5 Spread 1 tbsp pâté evenly over each bread slice.
