Mushroom Turnovers Recipe

Ingredients
  • 1 lb mushrooms, coarsely sliced
  • 1 tsp salt
  •  Cooking spray
  • 6 tbsps ice water
  • 2 c all-purpose flour
  • 6 tbsps chilled butter, cut into small pieces
  • 1 large egg white, lightly beaten
  • 1/8 tsp salt
  •  Pastry:
  • 1/8 tsp black pepper
  • 1/4 c minced shallots
  • 2 tsps water
  • 2 tbsps sliced fresh basil
  •  Filling:
  • 3/4 c (6 oz) block-style fat-free cream cheese

Directions
  • Step #1 To prepare pastry, lightly spoon flour into dry measuring c; level with a knife.
  • Step #2 Combine flour, cream cheese, butter, & 1 tsp salt in a food processor/blender; pulse 4 times or until mixture resembles coarse meal.
  • Step #3 With processor on, add ice water through food chute, processing until dough forms a ball.
  • Step #4 Gently press mixture into a 4-inch circle on plastic wrap.
  • Step #5 Cover up & chill 15 mins.
  • Step #6 To prepare filling, place mushrooms in food processor/blender, & process until finely sliced.
  • Step #7 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Step #8 Add shallots; cook 1 min or until soft.
  • Step #9 Stir in mushrooms, 1/8 tsp salt, & pepper.
  • Step #10 Cook 10 mins or until most of liquid evaporates, stirring frequently.
  • Step #11 Remove from heat; stir in the basil.
  • Step #12 Cool completely.
  • Step #13 Preheat oven to 350°.
  • Step #14 Combine 2 tsps water & egg white in a small bowl; stir well with a whisk.
  • Step #15 Divide dough into 24 equal portions.
  • Step #16 Shape each portion into a ball; chill in the fridge.
  • Step #17 Working with 1 portion at a time, roll each dough ball into a 4-inch circle on a lightly floured surface.
  • Step #18 Lightly brush pastry with egg white mixture.
  • Step #19 Spoon about 2 tsps mushroom filling onto half of each circle.
  • Step #20 Fold dough over filling; press edges together with a fork to seal.
  • Step #21 Brush egg white mixture over pastry.
  • Step #22 Place on a baking sheet lined with parchment paper.
  • Step #23 Repeat procedure with remaining dough, & egg white mixture, filling, placing pastries 1 inch apart.
  • Step #24 Bake at 350° for 20 mins or until lightly browned.
  • Step #25 Let stand 5 mins before serving.
