Ingredients
3/4 c whole milk
1 c all-purpose flour
1/2 tsp kosher salt
1 tbsp plus 1 tsp unsalted butter, melted
3 large eggs
Directions
Step #1 Heat oven to 450° F.
Step #2 With fingers or a pastry brush, use 1 tsp of the butter to coat 6 c in a popover or muffin tin.
Step #3 Whisk the eggs in a small bowl.
Step #4 Whisk in the milk & the remaining butter.
Step #5 In a large bowl, mix the flour & salt.
Step #6 Slowly whisk the eggs into the flour, just until mixd.
Step #7 Divide the batter evenly among the c, filling them about halfway.
Step #8 Bake for 15 mins (don't open oven door).
Step #9 Lower temperature to 350° F & bake this until puffed & golden, 15 to 20 mins more.
Step #10 Check one popover by breaking it open.
Step #11 If it is slightly underdone (moist, not airy), turn off the oven & leave the popovers inside for 5 to 10 mins more.
