Cambodian Summer Rolls Recipe

Ingredients
  • 1 garlic clove, minced
  • 1 tsp chile paste with garlic
  • 2 tbsps sugar
  • 6 oz uncooked rice noodles
  • 1/3 c low-sodium soy sauce
  • 1/4 c water
  •  Dipping sauce:
  • 3 c shredded red leaf lettuce
  •  Rolls:
  • 1/4 c hoisin sauce
  • 2 tbsps fresh lime juice
  • 1/4 c thinly sliced fresh basil
  • 12 (8-inch) round sheets rice paper
  • 2 tbsps sliced fresh cilantro
  • 1/4 c thinly sliced fresh mint
  • 1 tsp minced peeled fresh ginger
  • 6 c water
  • 1 lb medium shrimp

Directions
  • Step #1 To prepare rolls, bring 6 c water to a boil In a large-ish saucepan.
  • Step #2 Add the shrimp; cook 3 mins or until done.
  • Step #3 Drain & rinse with cold water.
  • Step #4 Peel shrimp; chill in the fridge.
  • Step #5 Place rice noodles In a large-ish bowl; cover with boiling water.
  • Step #6 Let stand 8 mins; drain.
  • Step #7 Add cold water to a large, shallow dish to a depth of 1 inch.
  • Step #8 Place 1 rice paper sheet in water.
  • Step #9 Let stand 2 mins or until soft.
  • Step #10 Place rice paper sheet on a flat surface.
  • Step #11 Spread 1 tsp hoisin sauce in the center of sheet; top this with 2 to 3 shrimp, 1/4 c lettuce, 1 tsp basil, about 1/4 c rice noodles, & 1 tsp mint.
  • Step #12 Fold sides of sheet over filling, roll up jelly-roll fashion, & carefully press seam to seal.
  • Step #13 Place roll, seam side down, on a serving platter; cover to keep from drying.
  • Step #14 Repeat procedure with remaining rice paper, lettuce, hoisin sauce, shrimp, rice noodles, basil, & mint.
  • Step #15 To prepare dipping sauce, mix soy sauce & remaining ingredients in a small bowl; stir with a whisk.
