Black-eyed Pea-and-ham Dip Recipe

Ingredients
  • 1 to 2 Tbsp. apple cider vinegar
  • 1/2 c sliced country ham
  • 2 tbsps olive oil
  • 2 green onions, sliced
  • 1 celery rib, finely sliced
  • 2 (15.8-oz.) cans black-eyed peas, rinsed & drained
  •  Cornbread crackers
  • 1/4 c sliced fresh parsley
  • 1 large tomato, finely sliced
  • 3/4 c water

Directions
  • Step #1 Sauté ham in a lightly greased large nonstick skillet over medium-high heat 3 to 5 mins or until lightly brown; stir in the black-eyed peas & 3/4 c water.
  • Step #2 Reduce heat to medium, & let simmer 8 mins or until liquid is reduced by three-fourths.
  • Step #3 Partially mash beans with back of a spoon to desired consistency.
  • Step #4 Stir together tomato & next 5 ingredients.
  • Step #5 Spoon warm bean mixture into a serving dish, & top this with tomato mixture.
  • Step #6 Serve with crackers.
  • Step #7 Note: Prepare dip 24 hrs in advance, if desired; then reheat before serving.
