Spinach-red Pepper Crostini Recipe

Ingredients
  • 1 large garlic clove
  • 1 (7-oz) jar roasted peppers, drained & cut into thin strips
  • 1/2 c shredded Parmesan cheese
  • 1 (10-oz) package frozen sliced spinach, thawed
  • 1/4 tsp pepper
  • 3 tbsps fat-free mayonnaise
  • 2 tbsps fat-free milk
  • 1/4 tsp salt
  • 1/4 c walnuts, toasted*
  • 1 (8-oz) French baguette, cut diagonally into 1/4-inch-thick slices

Directions
  • Step #1 Bake bread slices on a baking sheet at 375° for 5 mins.
  • Step #2 Set aside.
  • Step #3 Drain spinach well, pressing between paper towels.
  • Step #4 Process spinach, Parmesan cheese, & next 6 ingredients in a food processor/blender until mixture is smooth.
  • Step #5 Spread spinach mixture evenly over bread slices.
  • Step #6 Bake at 375° for 5 mins.
  • Step #7 Top evenly with roasted pepper strips.
  • Step #8 Serve as soon as possible.
  • Step #9 NOTE: To toast walnuts, spread on a baking sheet, stirring every once in awhile, & bake this at 350º, 5 to 10 mins.
  • Step #10 *1/4 c pecans may be substituted.
