Red Pepper Hummus Recipe

Ingredients
  • 1/2 c roasted red bell peppers, drained & sliced
  • 1/4 c fresh lemon juice
  • 3/4 tsp salt
  • 1/4 tsp ground cumin
  •  Garnishes: lettuce, toasted sesame seeds, sliced green onions
  • 1 tbsp sliced fresh cilantro
  • 2 tbsps olive oil
  • 1/3 c tahini
  • 1 (15-oz) can navy beans, rinsed & drained
  • 2 garlic cloves, sliced
  • 1/4 tsp ground coriander
  • 1/4 tsp ground red pepper

Directions
  • Step #1 Process first 9 ingredients in a food processor/blender or mixer until smooth, stopping to scrape down sides.
  • Step #2 With processor running, pour oil through food chute in a slow, steady stream; process until smooth.
  • Step #3 Stir in cilantro; chill 1 hr.
  • Step #4 Garnish, if desired.
