Overnight Marinated Shrimp Recipe

Ingredients
  • 1 c vegetable oil
  • 7 1/2 c water
  • 1/2 c sliced fresh basil
  • 1 yellow bell pepper, sliced
  • 3 tbsps sugar
  • 3 tbsps fresh lemon juice
  • 1 tbsp hot sauce
  • 1 tbsp grated lemon rind
  • 1 c red wine vinegar
  • 2 small red onions, sliced
  • 3 lbs unpeeled, large fresh shrimp
  • 1/2 tsp salt
  • 1 tbsp white wine Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, pressed

Directions
  • Step #1 Bring 7 1/2 c water to a boil; add shrimp, & cook 2 to 3 mins or until shrimp turn pink.
  • Step #2 Drain & rinse with cold water.
  • Step #3 Peel shrimp, and, if desired, devein.
  • Step #4 Layer shrimp, red onion slices, & bell pepper slices in an airtight container.
  • Step #5 Whisk together vegetable oil & next 9 ingredients; pour over shrimp.
  • Step #6 Cover up & chill 24 hrs, stirring every once in awhile.
  • Step #7 Stir in 1/2 c sliced basil 1 hr before serving.
