Stuffed Squash Blossom Bruschetta Recipe

Ingredients
  • 1 1/2 tbsps minced shallots (about 1 small)
  • 1/4 tsp salt
  • 1/2 c (2 oz) grated fresh Parmesan cheese
  • 1 c part-skim ricotta cheese
  •  Cooking spray
  • 16 (1/2-oz) slices diagonally cut French bread baguette
  • 1 tbsp sliced fresh dill
  • 2 garlic cloves, halved
  • 1/4 tsp freshly ground black pepper
  • 16 large squash blossoms (about 3 c)

Directions
  • Step #1 Prepare grill or grill pan.
  • Step #2 Place bread on grill rack or grill pan coated with cooking spray; grill 2 mins on each side or until lightly browned.
  • Step #3 Remove from grill.
  • Step #4 Rub cut sides of garlic over one side of each bread slice.
  • Step #5 Set aside.
  • Step #6 Preheat oven to 350°.
  • Step #7 Spoon ricotta onto several layers of heavy-duty paper towels; spread to 1/2-inch thickness.
  • Step #8 Cover up with extra paper towels; let this stand 15 mins.
  • Step #9 Scrape into a bowl using a rubber spatula.
  • Step #10 Stir in Parmesan & next 4 ingredients (through pepper).
  • Step #11 Gently spoon about 1 tbsp ricotta mixture into each blossom.
  • Step #12 Gently press edges of blossoms to seal in cheese.
  • Step #13 Place stuffed blossoms in a 13 x 9-inch baking dish coated with cooking spray.
  • Step #14 Bake at 350° for 15 mins or until thoroughly heated.
  • Step #15 Top each bread slice with 1 squash blossom; serve as soon as possible.
