Bacon-wrapped Shrimp With Basil-garlic Stuffing Recipe

Ingredients
  • 2 garlic cloves, minced
  • 1 lb large shrimp
  • 1 1/2 tbsps freshly grated Parmesan cheese
  • 1/2 c prepared fruit-based barbecue sauce
  • 1/3 c sliced fresh basil
  • 16 pieces thinly sliced bacon

Directions
  • Step #1 Peel & devein shrimp, leaving tails on.
  • Step #2 Butterfly shrimp by cutting a slit along the back & carefully pressing open.
  • Step #3 Combine basil, Parmesan, & garlic in a small bowl.
  • Step #4 Place basil mixture evenly in shrimp openings; press shrimp closed.
  • Step #5 Cook bacon over med-heat/flame until partially cooked.
  • Step #6 Drain on paper towels.
  • Step #7 Wrap each shrimp with 1 slice bacon, & place on greased baking sheet.
  • Step #8 Brush barbecue sauce over shrimp, & bake this at 400° for 8 to 9 mins.
