Apricot-studded Brie Recipe

Ingredients
  •  Garnishes: extra dried apricot & fig cutouts
  • 1/4 c light rum
  • 1/2 c sliced dried figs
  • 1/2 c golden raisins
  •  Sifted powdered sugar
  • 1/4 c honey
  • 1 (8-oz) round Brie
  • 2 (8-oz) packages cream cheese, softened
  • 1/2 c apricot nectar
  • 1 c sliced dried apricots
  • 1 (2-oz) package honey-roasted cashews, coarsely sliced

Directions
  • Step #1 Combine first 3 ingredients in a medium saucepan; bring to a boil.
  • Step #2 Add 1 c apricots, 1/2 c figs, & raisins; stir well & cook 1 min.
  • Step #3 Remove from heat.
  • Step #4 Cover up & let this stand 30 mins.
  • Step #5 Drain & reserve juice.
  • Step #6 Set fruit aside.
  • Step #7 Remove rind from Brie.
  • Step #8 Cut cheese into cubes.
  • Step #9 Combine cream cheese & Brie In a large-ish mixing bowl; beat at medium speed of an electric mixer until smooth.
  • Step #10 Stir in soaked fruit, cashews, & 1 tbsp reserved juice.
  • Step #11 Soak a triple layer of cheesecloth in remaining reserved juice; squeeze out excess moisture.
  • Step #12 Line an 8" round cakepan with cheesecloth.
  • Step #13 Spoon cheese mixture into pan, spreading evenly.
  • Step #14 Cover up & chill overnight.
  • Step #15 Remove cheese mixture from pan; discard cheesecloth.
  • Step #16 Coat surface of cheese with powdered sugar.
  • Step #17 Garnish, if desired.
  • Step #18 Wrap in plastic wrap.
  • Step #19 Serve with gingersnaps.
