Mussels With Fennel Recipe

Ingredients
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 3/4 c dry white wine
  • 2 tsps olive oil
  • 1/2 c water
  • 42 mussels (about 2 lbs), scrubbed & debearded
  • 1 1/2 c sliced fennel bulb (about 2 small bulbs)
  • 2 tbsps fresh lemon juice
  • 2 (14.5-oz) cans no-salt-added sliced tomatoes, undrained
  • 1 tsp fennel seeds

Directions
  • Step #1 Heat oil In a large-ish skillet over medium-high heat.
  • Step #2 Add fennel, fennel seeds, & garlic; sauté 3 mins.
  • Step #3 Stir in wine, water, juice, salt, & tomatoes; bring to a boil.
  • Step #4 Reduce heat, & let simmer 10 mins.
  • Step #5 Add mussels; cover & cook 6 mins or until shells open.
  • Step #6 Remove from heat; discard any unopened shells.
