Rustic Jicama Appetizer With Red Chile And Lime Recipe

Ingredients
  • 1/3 c fresh lime juice
  • 2 small cucumbers, peeled, halved lengthwise, seeded, & thinly sliced (about 3 c)
  • 1/3 c coarsely sliced fresh cilantro
  • 1 medium jicama (about 1 lb)
  • 1/2 c thinly sliced radishes
  • 1/2 tsp salt
  • 3 navel oranges, peeled, halved lengthwise, & cut crosswise into 1/4-inch-thick slices (about 1 1/2 c)
  • 2 tsps dried ground guajillo chile or hot chili powder

Directions
  • Step #1 Peel & cut the jicama in half.
  • Step #2 Place halves cut sides down, & cut into 1/4-inch-thick slices.
  • Step #3 Combine jicama, oranges, cucumbers, radishes, & juice in a bowl.
  • Step #4 Let stand 30 mins.
  • Step #5 Add the ground chile & salt, & toss well.
  • Step #6 Sprinkle top with cilantro.
