Cheesy Spinach-artichoke Dip Recipe

Ingredients
  • 1/2 c fat-free mayonnaise
  • 1 tbsp red wine vinegar
  • 1 (14-oz) can quartered artichoke hearts, drained & coarsely sliced
  • 3/4 c grated Parmesan cheese
  • 3/4 c fat-free milk
  • 1 (8-oz) tub light cream cheese, softened
  • 1/2 c (2 oz) crumbled reduced-fat feta cheese
  • 1 c boiling water
  • 1/3 c sliced sun-dried tomatoes, packed without oil
  • 1 (8-oz) carton low-fat sour cream
  • 1/4 tsp freshly ground pepper
  • 11 (6-inch) pita bread rounds
  • 1 (10-oz) package frozen sliced spinach, thawed, drained, & squeezed dry
  • 1/2 c sliced onion

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Split each pita bread in half horizontally; cut each half into 6 wedges.
  • Step #3 Place pita wedges in a single layer on baking sheets; bake this at 350° for 10 mins or until toasted.
  • Step #4 Combine sun-dried tomatoes & boiling water in a bowl; let this stand for 1 hr or until soft.
  • Step #5 Place artichokes & next 11 ingredients (through garlic) in a 3 1/2-quart electric slow cooker (aka crockpot); stir well.
  • Step #6 Cover up with lid; cook on low-heat setting 1 hr.
  • Step #7 Drain tomatoes; stir in theto dip.
  • Step #8 Cover up & cook 1 hr.
  • Step #9 Serve warm with toasted pita wedges.
