French-style Stuffed Eggs Recipe

Ingredients
  • 1/8 tsp freshly ground black pepper
  • 1 tbsp minced parsley
  • 1 tsp mustard
  •  Cooking spray
  • 1 tbsp low-fat mayonnaise
  • 1/8 tsp salt
  • 1/4 tsp sliced fresh thyme
  •  Fresh thyme leaves (optional)
  • 8 large eggs
  • 2 (1-oz) slices white bread, torn into large pieces
  • 1/3 c minced reduced-fat ham
  • 1 tbsp minced green onions

Directions
  • Step #1 Place eggs In a large-ish saucepan.
  • Step #2 Cover up with water to 1 inch above eggs; bring just to a boil.
  • Step #3 Remove from heat; cover & let this stand 12 mins.
  • Step #4 Drain & rinse with cold running water until cool.
  • Step #5 Peel eggs; slice in half lengthwise.
  • Step #6 Remove yolks; discard 4 yolks.
  • Step #7 Place remaining 4 yolks in a medium bowl.
  • Step #8 Add ham & next 7 ingredients (through pepper); stir until mixd.
  • Step #9 Place bread in a food processor/blender; pulse 10 times or until coarse crumbs measure 1 c.
  • Step #10 Spoon about 1 tsp yolk mixture into each egg white half.
  • Step #11 Top each half with 1 tbsp breadcrumbs.
  • Step #12 Coat breadcrumbs with cooking spray.
  • Step #13 Preheat broiler.
  • Step #14 Place eggs on a baking sheet; broil 1 min or until breadcrumbs are toasted.
  • Step #15 Garnish with thyme leaves, if desired.
