Ingredients
1 tsp grated lemon zest
1 tsp kosher salt
3 cloves garlic, finely sliced
1/4 tsp black pepper
16 fresh baby artichokes
1 c fresh flat-leaf parsley leaves, sliced
1/4 c olive oil
Mayonnaise, for serving (optional)
Directions
Step #1 Heat oven to 400° F.
Step #2 Trim the top 1/4 of each artichoke.
Step #3 Remove & discard the tough, dark green outer leaves until you can see the pale green heart underneath.
Step #4 Trim the entire stem.
Step #5 Cut each artichoke in half lengthwise.
Step #6 In a large cast-iron skillet, oil, garlic, mix the parsley, pepper, salt, & 1/4 c water.
Step #7 Add the artichokes & toss.
Step #8 Roast, stirring twice, until the artichokes are tender, about 30 mins.
Step #9 Sprinkle top with the zest.
Step #10 Serve with the mayonnaise (if desired).
