Roast Herb Artichokes Recipe

Ingredients
  • 1 tsp grated lemon zest
  • 1 tsp kosher salt
  • 3 cloves garlic, finely sliced
  • 1/4 tsp black pepper
  • 16 fresh baby artichokes
  • 1 c fresh flat-leaf parsley leaves, sliced
  • 1/4 c olive oil
  •  Mayonnaise, for serving (optional)

Directions
  • Step #1 Heat oven to 400° F.
  • Step #2 Trim the top 1/4 of each artichoke.
  • Step #3 Remove & discard the tough, dark green outer leaves until you can see the pale green heart underneath.
  • Step #4 Trim the entire stem.
  • Step #5 Cut each artichoke in half lengthwise.
  • Step #6 In a large cast-iron skillet, oil, garlic, mix the parsley, pepper, salt, & 1/4 c water.
  • Step #7 Add the artichokes & toss.
  • Step #8 Roast, stirring twice, until the artichokes are tender, about 30 mins.
  • Step #9 Sprinkle top with the zest.
  • Step #10 Serve with the mayonnaise (if desired).
