Chilled Avocado Soup Recipe

Ingredients
  • 2 ripe peeled avocados
  • 1 (4-oz) can or jar sliced green chiles
  • 1/4 tsp black pepper
  • 1 tbsp lime juice
  • 1/2 c whole milk
  • 1 1/2 c vegetable broth
  •  Fresh cilantro and/or crushed tortilla chips for garnish
  • 3/4 tsp salt

Directions
  • Step #1 Cut the avocados in half, & remove the pits.
  • Step #2 Spoon avocado into a mixer, add the remaining ingredients (except garnish), & puree until creamy.
  • Step #3 Chill the soup for up to 2 hrs before serving, or serve as soon as possible.
  • Step #4 Cover up leftovers with plastic wrap, put in the fridge, & use within 2 days.
