Danish Rice Pudding With Almonds Recipe

Ingredients
  • 1/4 c sherry
  • 1/2 (.25 oz) envelope unflavored gelatin
  • 1/3 c Arborio rice
  • 1 c heavy cream
  • 1 (12 oz) package frozen raspberries - thawed & drained
  • 1/4 c sliced blanched almonds
  • 2 c milk
  • 1/3 c vanilla extract

Directions
  • Step #1 In a saucepan, bring the milk to a boil, & then add rice.
  • Step #2 Reduce heat to simmer, & continue cooking for 20 mins, stirring every once in awhile.
  • Step #3 Remove from heat, & set aside to cool to about room temp.
  • Step #4 In a small saucepan, mix the sherry & gelatin; stir over low heat/flame until the gelatin is dissolved.
  • Step #5 Stir in the sugar until completely dissolved, & then stir in the vanilla.
  • Step #6 Stir into the rice with the sliced almonds.
  • Step #7 Refrigerate.
  • Step #8 Pour cream into a bowl, & whip until light & fluffy soft peaks appear.
  • Step #9 Fold into chilled rice pudding.
  • Step #10 Serve in small bowls, topped with frozen raspberries.
