Ingredients
1/4 c olive oil
4 to 6 onions (6 to 8 oz. each)
1 tsp sliced fresh chives or fresh rosemary leaves
Salt, pepper, & cayenne
1/4 c white wine vinegar
1/4 c pine nuts, whole, or pecans, sliced
Directions
Step #1 Peel onions; trim tops.
Step #2 Trim root ends if needed for onions to sit flat.
Step #3 Set each onion on its root end.
Step #4 From top, cut through middle of each onion to 1/2 inch from bottom.
Step #5 Repeat cuts 1/2 to 3/4 inch apart to make 10 or 12 attached wedges on each onion.
Step #6 Set onions, cuts up, in a 9- by 13-inch pan.
Step #7 Drizzle evenly with oil, then sprinkle lightly with salt, pepper, & cayenne.
Step #8 Bake, in a 400° oven until onions are very tender when pierced in center, covered, about 1 hr.
Step #9 Uncover.
Step #10 Sprinkle top onions evenly with vinegar, & chives, nuts, & bake this until onion tips are lightly browned, 10 to 15 mins longer.
Step #11 Serve hot or warm, spooning pan juices over onions.
