Jack Quesadillas With Pear Salsa Recipe

Ingredients
  •  Quesadillas:
  • 2 c (8 oz) shredded Monterey Jack cheese
  • 4 c sliced peeled Anjou pear (2 lbs)
  • 2 tbsps fresh lime juice
  •  Pear salsa:
  • 1 tbsp grated lime rind
  • 1 jalapeño pepper, seeded & sliced
  • 1/3 c sliced red onion
  • 2 tbsps sliced fresh or 2 tsps dried mint
  • 8 (8-inch) fat-free flour tortillas
  • 1/2 tsp freshly ground black pepper
  • 1 tsp sugar
  • 1/2 c sliced green onions

Directions
  • Step #1 To prepare salsa, mix first 8 ingredients in a bowl; cover & chill in the fridge.
  • Step #2 To prepare the quesadillas, place 1 tortilla in a medium nonstick skillet over med-heat/flame, & top this with 1/2 c cheese.
  • Step #3 Sprinkle top with 2 tbsps onions; top this with a tortilla.
  • Step #4 Cook 3 mins, pressing down with a spatula until cheese melts.
  • Step #5 Turn carefully, & cook this until thoroughly heated (about 1 min).
  • Step #6 Repeat procedure with the remaining tortillas, cheese, & green onions.
  • Step #7 Cut each quesadilla into sixths; serve this with pear salsa.
