Prosciutto-wrapped Figs With Blue Cheese Recipe

Ingredients
  • 16 whole almonds
  • 1/8 tsp salt
  • 1/2 (4-oz.) package blue cheese, cut into 16 pieces
  • 1/4 tsp pepper
  • 16 dried mission figs, trimmed
  • 4 thin slices prosciutto*
  • 1 tbsp extra virgin olive oil

Directions
  • Step #1 Place almonds in a shallow pan.
  • Step #2 Bake at 350° for 10 mins or until lightly toasted, stirring every once in awhile.
  • Step #3 Cut each prosciutto slice lengthwise into 4 thin strips.
  • Step #4 If necessary, make a small slit in center of each fig.
  • Step #5 Stuff each fig with 1 piece of blue cheese & 1 almond.
  • Step #6 Wrap 1 prosciutto slice around each fig, pressing to seal.
  • Step #7 Toss wrapped figs with oil, pepper, & salt; arrange in a single layer on a baking sheet.
  • Step #8 Broil figs 3 inches from heat 3 mins or until prosciutto begins to crisp.
  • Step #9 Serve as soon as possible.
  • Step #10 *4 thin slices deli ham may be substituted.
