Butternut, Goat Cheese, And Walnut Spread Recipe

Ingredients
  • 36 (1/2-inch-thick) slices French bread baguette, toasted (about 8 oz)
  • 1 whole garlic head
  • 2 tbsps fresh lemon juice
  • 1 medium butternut squash (about 1 1/2 lbs)
  • 1/4 c sliced walnuts, toasted
  • 1 (3-oz) package goat cheese
  •  Cooking spray
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Cut the squash in half lengthwise; remove & discard seeds.
  • Step #3 Place squash halves, cut sides down, on a foil wrap-lined jelly roll pan coated with cooking spray.
  • Step #4 Remove white papery skin from the garlic head (do not peel or separate the cloves).
  • Step #5 Wrap garlic head in foil wrap.
  • Step #6 Place garlic on pan with squash.
  • Step #7 Bake at 400° for 30 mins or until squash is tender.
  • Step #8 Cool slightly.
  • Step #9 Scoop out the pulp from squash, & discard skins.
  • Step #10 Separate garlic cloves; squeeze to extract garlic pulp.
  • Step #11 Discard skins.
  • Step #12 Place squash, garlic, juice, salt, & cheese in a food processor/blender; process until smooth.
  • Step #13 Spoon mixture into a bowl, & sprinkle evenly with nuts.
  • Step #14 Serve with baguette slices.
