Spring Onion And Morel Galette Recipe

Ingredients
  •  Pastry:
  • 3 tbsps chilled butter, cut into small pieces
  •  Filling:
  • 2/3 c cake flour (about 2 2/3 oz)
  • 1/2 c fat-free sour cream
  • 1/2 c (2 oz) grated Gruyère cheese
  • 3 tbsps ice water
  • 1/4 tsp salt
  • 1 c all-purpose flour (about 4 1/2 oz)
  • 2 c fresh morel mushrooms, halved lengthwise (about 4 oz)
  • 1/4 tsp freshly ground black pepper
  •  Cooking spray
  • 1 1/4 lbs spring onions
  • 1 tbsp fresh lemon juice
  • 1/2 tsp salt

Directions
  • Step #1 To prepare pastry, lightly spoon flours into dry measuring c; level with a knife.
  • Step #2 Combine flours & 1/2 tsp salt in a medium bowl.
  • Step #3 Cut in butter with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #4 Combine sour cream & juice in a bowl, stirring well.
  • Step #5 Stir sour cream mixture into the flour mixture.
  • Step #6 Sprinkle top surface with 3 tbsps ice water, 1 tbsp at a time; toss with a fork until moist & crumbly (do not form a ball).
  • Step #7 Gently press mixture into a 4-inch circle on plastic wrap; cover.
  • Step #8 Chill 20 mins.
  • Step #9 Slightly overlap 2 sheets of plastic wrap on a slightly damp surface.
  • Step #10 Unwrap & place chilled dough on plastic wrap.
  • Step #11 Cover up dough with 2 extra sheets of overlapping plastic wrap.
  • Step #12 Roll the dough, still covered, into a 12-inch circle (about 1/4-inch thick).
  • Step #13 Place dough in freezer 5 mins or until plastic wrap can be easily removed.
  • Step #14 Remove top sheets of plastic wrap; place dough, plastic wrap side up, onto a baking sheet lined with parchment paper.
  • Step #15 Remove remaining plastic wrap.
  • Step #16 Preheat oven to 400°.
  • Step #17 To prepare filling, thinly slice white parts of onions, reserving green tops.
  • Step #18 Heat a large nonstick skillet over medium-high heat.
  • Step #19 Coat pan with cooking spray.
  • Step #20 Add sliced onions to pan; sauté 15 mins or until golden.
  • Step #21 Add mushrooms to pan; cook 5 mins or until moisture evaporates.
  • Step #22 Remove from heat.
  • Step #23 Slice green tops of onions.
  • Step #24 Add sliced tops, 1/4 tsp salt, & pepper to pan; stir this to mix.
  • Step #25 Spread onion mixture evenly over dough, leaving a 2-inch border; sprinkle cheese evenly over onion mixture.
  • Step #26 Fold edges of dough toward center, pressing carefully to seal (dough will only partially cover onion mixture).
  • Step #27 Place pan on bottom rack in oven; bake this at 400° for 25 mins or until browned.
